³ Description

Super easy yet very nutritious and yummy salad. Give it a try and you will be so satisfied.

² Ingredients

  •  1 cup, cubes Eggplant
  •  1 serving (serving = 1/2 cup) Bush's Best Dark Red Kidney Beans
  •  1/2 serving (serving = 1/2 medium avocado) Calavo Avocado
  •  1 serving (serving = 1/2 cup) Kroger Home Style Pasta Sauce - Tomato & Basil
  •  1 cup Baby Spinach
  •  1/2 breast, bone and skin removed Skinless Chicken Breast
   

q Directions

Cut one small eggplant and baked it at 425F for 20 min. Cooled it down. Then mixed it witb 1/2 cup dark red kidney beans, pasrley, red onion, 3oz of chicken breast and homemade tomato sauce (tomato n garlic). Mix nicely together and top with avocado. Sprinkle with some parmesan and drizzle some sriracha. I put my salad on a bed of spinach. It tasted amazing.
