Perfect for a guilt free Birth Day Cake!

q Directions

Preheat oven at 350
Mix dry ingredients of cake: Coconut flour, oat flour, protein powder, baking soda, baking powder, stevia (45 packets or 1/2 cup baking stevia) , cinnamon and salt.
In a separate bowl mix your wet ingredients for the cake: egg whites, egg, vanilla extract, mashed avocado, almond milk, (3/4 cup) Greek yogurt.
In a mixer add the wet ingredients and add in little by little the dry ingredients.
Place your mixture in 2 separate round greased baking molds and cook for 25 minutes.
Meanwhile make your "Caramel" Filling by putting your soaked dates (for 10 min) in warm water in your food processor till you get a caramel like texture (Add a bit of your date water at a time to get a creamier consistency)
When your cakes are cooked take out and let cook for 10 min. Then spread your filling on one half and put the other half on top.
For the frosting: mix your cream cheese with your Greek yogurt(1/4cup), stevia (5 packets), unsweetened coco powder and a bit of vanilla extract and you will be done decorating. Finally add a drizzle of dark chocolate if you want and you will be done!
