This is a perfect recipe for those who don't eat bread like me, but absolutely love french toast!
Preheat oven to 375F. Line an 8x8 baking pan with parchment paper. Cook quinoa according to package directions. While its cooking, whisk the eggs in a medium bowl. Add the remaining ingredients until well combined. When quinoa is cooked, dump it into the bowl with the egg mixture. Stir well. Pour into lined baking pan and bake in oven for 25-30 minutes. Let cool for five minutes, then cut into square. Serve with maple syrup and fresh berries! Enjoy!!!
