A healthy version of bang bang shrimp without the mayo and frier.
Peel and devein 32 medium shrimp. Beat egg whites and drench shrimp making sure to fully coat. Mix together on a plate or wide bowl, coconut flour, cornstarch and salt. Individually take each shrimp and press into breading mix making sure to fully coat shrimp. In a large nonstick skillet over medium high heat, spray with cooking oil and cook 1/2 shrimp at a time for 5-7 minutes until firm and fully cooked. Repeat for the second half of the shrimp. Mix together, sriracha, greek yogurt, and sweet chili sauce. In a bowl toss cooked with with sauce. Top with green onion. Enjoy.
