Recreating a childhood favorite is always a pleasure specially Ice Cream Sandwiches!
Put the garbanzo beans in the processor until smooth, then add the dates (which you need to hydrate for 10 min in hot water) honey and the rest of the ingredients until you get a fudgy texture (do not throw away the water you used for your dates because it can serve you to soften your mixture when needed) then take out your fudge mixture spread to achieve a 1 cm high mixture on wax paper (10 x 7 inch square) and cook for 30 min at 350 then let cool. While your outer cooky is in the over you can make your ice cream by mixing your frozen bananas and vanilla extract in the food processor. Once processed just put in the freezer while the cookies bake and cook, then cut the cake in half, spread the ice-cream top with the other half of the cookie and freeze for a bit longer, then cut in to little cubes to make 8 servings and they are ready to eat!
