-1/2c (56g) coconut flour
-1/4c (26g) flaxseed meal
-1/2c reduced fat shredded coconut
-1/4c truvia
-1c hot water (or coconut milk)
-1c egg whites
-1tsp coconut extract (optional)
1) Mix together dry ingredients
2) Add hot water and at let sit for 5-10min
3) Meanwhile preheat oven to 350F and line 8x4in loaf tin
4) Add egg whites and coconut extract
5) Bake for 1hr- 1hr 15min
