Mashed sweet potato and spices made a pleasantly sweet, Indian-spiced spread for my eggplant "bun."

² Ingredients

  •  1.5 serving (serving = 4 oz) Laura's Lean Beef 96% Lean Ground Beef
  •  1/4 lime yields Lime Juice
  •  1/2 cup, cubes Eggplant
  •  1/4 cup, mashed Sweet Potato (Without Skin, Cooked, Boiled)
  •  2 serving (serving = 1/4 tsp) Lisy Curry Powder
  •  1 serving (serving = 1/4 tsp) Tone's Spanish Paprika
  •  1 serving (serving = 2 tbsp) Whole Foods Market Nutritional Yeast

Burger patty (or protein of your choosing)
Eggplant chips (recipe: http://www.sprint2thetable.com/2013/04/eggplant-chips-wiaw/)
1/4 C sweet potato, mashed
2 T nutritional yeast
1/2 tsp curry powder
Juice of 1/4 lime
Smoked paprika, to taste

Prepare burger and chips.
Meanwhile, prepare your sweet potato spread by mixing sweet potato, nutritional yeast, spices, and lime in a small bowl. You may need to add water depending on the moisture content of your sweet potato.
Construct your burger and enjoy!
