yummy fig newtons made from clean ingredients. A great bulking treat!
Crust:
3 Tbsp. flax seed meal
¾ cup cashew or almond meal
½ cup brown rice flour
6 Tbsp. canola oil
¼ tsp. salt
1/3 cup maple syrup, honey, or agave
Filling:
1.5 cups dried figs
¾ cups unsweetened apple sauce
2 Tbsp. maple syrup, honey, or agave
Directions:
Preheat the oven to 350.
Line cookie sheet with parchment paper.
Mix all crust ingredients together.
Spread into a large thick rectangle.
Cook for about 8 minutes
Blend all filling ingredients in a food processor.
When crust is done cooking, spread fig mixture over half of the rectangle of crust.
Cut a line down the middle of the crust with a knife, diving the crust into a section with filling and a section without filling.
Pick up the parchment paper so the top crust falls onto the crust with the fig mixture on it.
Cook in the oven for about 8 more minutes
