² Ingredients

  •  1 cup, mashed Cooked Pumpkin (from Fresh)
  •  1 large Egg
  •  1 tsp Vanilla Extract
  •  2 serving (serving = 1/4 cup) Gold Medal Whole Wheat Flour
  •  3 serving (serving = 1/2 cup) Market Basket Old Fashioned Oats
  •  3 tsp Granulated Sugar
  •  4 serving (serving = 1 tsp) Imperial Dark Brown Sugar
  •  2 serving (serving = 1/8 tsp) Great Value Baking Powder
  •  1 tsp Baking Soda
  •  1 tsp Salt
  •  1 tbsp Cinnamon
  •  1 tsp Nutmeg (Ground)
  •  1 tsp Cloves (Ground)
  •  1 serving (serving = 1/3 cup) Great Value Dried Cranberries
  •  1 serving (serving = 2 pieces) Trader Joe's 70% Dark Chocolate Wedges
   

q Directions

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.

In a mixing bowl whisk together pumpkin puree, egg, and vanilla until well combined. In a separate bowl, combine whole wheat flour, oats, sugars, baking powder, baking soda, salt, spices, dark chocolate, and dried cranberries. Fold together the wet and dry ingredients until just combined - do not overmix. The cookie dough will be very thick. Taste the dough and add a pinch of salt if needed.

Drop by spoonfuls onto cookie sheets and slightly flatten to the shape you want your cookie. Bake for 12-14 minutes until lightly browned. Allow to cool on the cookie sheet for at least 3 minutes.
