Lime in the coconut protein cookies... just pretend your in Key West and it's all good!
Here's the recipe: 1/2 cup coconut flour, 1/2 cup shredded reduced fat unsweetened coconut, 1 scoop vanilla whey protein powder, 1 Dannon light n fit key lime non fat Greek yogurt (5.3oz.) 1 egg, 2 egg whites, 2 tbsp. Agave nectar, 1/2 tsp baking powder, 1/2 tsp. baking soda, 1 tsp vanilla extract, juice of 1 lime, zest of 1 lime. Mix all ingredients and roll into 12 balls and place greased cookie sheet. Take a fork and mash cookies down into little circles. Bake cookies at 350 degrees for 10-12 mi. Until golden. Top with additional lime zest if desired and Enjoy!
