No-bake, gluten-free, low carb lemon energy cookies

² Ingredients

  •  1 serving (serving = 1 level scoop) Designer Whey Vanilla Praline Whey Protein
  •  0.8 serving (serving = 1/3 cup) Arrowhead Mills Organic Oat Flour
  •  1/4 cup, shredded Dried Coconut (Shredded, Sweetened)
  •  1 serving (serving = 1/4 cup) Bob's Red Mill Almond Meal Flour
  •  2 tbsp Honey
  •  3 serving (serving = 1 tbsp) Spectrum Organic Virgin Coconut Oil
  •  1/2 serving (serving = 1/3 cup) Ocean Spray Craisins Dried Cranberries
  •  1/4 lemon yields Lemon Juice
  •  1 dash Salt
   

q Directions

In a bowl, mix together the protein powder, oat flour, shredded coconut, ground almonds and salt.

Transfer to a food processor. Melt the coconut oil then add to the food processor along with the honey. Process for a couple of minutes.

Add the lemon juice, cranberries and 1 tsp lemon zest. Process for a few more minutes until everything is well combined. You should be left with a dough like texture that’s not too sticky but holds well together.

Press into cookie cutters or you can simply shape them into balls if you prefer.
