Combine coconut flor, 1/4 cup oats, and applesauce in a bowl. Add water slowly until a thick dough-like consistency is reached. Press into a pie pan and bake at 375 for 15 minutes
In a saucepan add rhubarb, strawberries, and any other berries of your choice (fresh or frozen) cook them down a little and add about 5 packets of stevia or other sweetener (depending on how sweet you like it). Pour mixture into pie crust.
Sprinkle 1/3 cup oats on the top
Bake at 375 for about 25 minutes and then lower the temperature to 275 and bake for an additional 20 minutes.
