³ Description

This is my absolute FAVORITE meal. It is a delicious spin on the usual sushi recipe and it it made with nutty tasting brown rice. It is so worth the time to make!

² Ingredients

  •  1 mango Mango
  •  3 teaspoon Sugar
  •  1.5 tsp Salt
  •  1 avocado, NS as to Florida or California Avocados
  •  8 spear, medium (5-1/4" to 7" long) Asparagus
  •  10 g Roasted and Toasted Whole Sesame Seeds
  •  8 serving (serving = 1/4 cup dry) Lundberg Short Grain Brown Rice
  •  8 serving (serving = 1 piece) Roland Nori Dried Seaweed
  •  1 serving (serving = 3 tbsp raw) Bob's Red Mill Unsweetened Shredded Coconut
  •  5 serving (serving = 1/2 cup) Sea Queen Imitation Crab Meat
  •  4 serving (serving = 1 tbsp) Kikkoman Rice Vinegar
   

q Directions

ingredients:
2 cups short grain brown rice
1/4 cup rice vinegar
1 Tbsp sugar
1.5 tsp salt

8 nori wraps

1 package (about 15 sticks) imitation crab
1 mango
8 spears asparagus
1 large avocado
3 Tbsp shredded unsweetened coconut
1.5 Tbsp sesame seeds

directions:
soak 2 cups brown rice for 30 minutes in 2 cups water. Turn on rice cooker and allow rice to cook until done.

In mean time prepare rice vinegar: combine rice vinegar, salt, and sugar. put to the side.

cut all produce into strips. blanch asparagus

When rice is done unplug rice cooker and allow it to sit for 10 minutes before removing the lid. Pour rice into wooden bowl and turn it out with a wooden spoon while fanning it. Pour rice vinegar concoction atop rice while continuing to fan/ turn it out. Cover rice with damp paper towel

put nori on top of sushi mat. put down rice, fillings, and roll.
