Got a sweet tooth? This sweet treat is perfect for breakfast, a snack or dessert!

² Ingredients

  •  0.12 serving (serving = 1/2 cup) Daisy Low Fat 2% Small Curd Cottage Cheese
  •  1 medium (2-1/2" dia) (approx 4 per lb) Peach
  •  1 tablespoon Light or Lite Cream Cheese
  •  1/2 medium Ripe Plantain
  •  1/2 serving (serving = 1 serving) Chobani 0% Plain Greek Yogurt (6 oz)
  •  0.16 serving (serving = 1 tbsp) Spectrum Organic Virgin Coconut Oil
  •  1/4 tsp Cinnamon
   

q Directions

Cut 1/2 of a very ripe Yellow Plantain (nearly all black skin) - into 2 pieces, then slice down the middle. Cook in 1/2t of Coconut Oil on low heat til lightly browned on both sides.
In a bowl, mix:
3oz. Plain NonFat Greek Yogurt
1TB LowFat Whipped Cream Cheese
1TB LowFat Cottage Cheese
(Sweeten if desired)

Cut 1 Peach into thin slices. Plate in between split Plantains & top with yogurt cream. Sprinkle with Cinnamon.

**ChefTiffy Tip**
For some added texture & crunch, sprinkle sliced Almonds on top!
