No shame in microwave "baking." This #strangebutgood cake took only 45 secs.

² Ingredients

  •  1/2 tsp Cinnamon
  •  1/2 tsp Vanilla Extract
  •  1.5 oz Butternut Winter Squash
  •  1/4 tsp Baking Powder (Low Sodium)
  •  0.66 serving (serving = 3 tbsp) Egg Beaters 100% Liquid Egg Whites
  •  1/2 serving (serving = 1/4 cup) Trader Joe's Peanut Flour Defatted
  •  1 serving (serving = 2-4 drops) Whole Foods Market Liquid Stevia Drops
   

q Directions

2 T peanut flour*
1/2 tsp cinnamon
1/4 tsp baking powder
1/4 tsp vanilla
2-3 drops liquid stevia
2 T egg whites (or flax egg)
1/2 small butternut squash, pre-roasted

Mix dry ingredients in a small bowl. Add wet ingredients and stir to combine.
Pour mixture in the “bowl” of the squash. Microwave ~45 seconds.
Top as desired (I used sugar-free syrup and pomegranate arils). Enjoy!
