A yummy cookie dough bite perfect to add on top of protein frozen yogurt, eat normally, or use in clean banana ice cream to make a blizzard from dairy queen.
*125 grams dates (make sure they are pitted dates and if you do not have a kitchen scale I would just say a large handful!)
*3 tablespoons water
*1 can chickpeas (around 2.5 cups once drained!)
*1/4 cup natural peanut butter
*1/8 teaspoon salt
*1/4 cup protein powder
*1/4 cup oats
*3 tablespoons dark chocolate or cocoa nibs (I use Enjoy Life dairy, nut & soy free mini chips!)
1.) Place the dates and water in food processor and blend till smooth.
2.) Rinse the chickpeas well, add to dates, and pulse till completely smooth!
3.) Add peanut butter, salt, and protein... Mix!
4.) Mix in the oats and chocolate. (I add two tablespoons of chocolate chips into mix and then press third tablespoon on top before baking!)
5.) Now you can either press into a baking dish, chill, and cut into "raw" cookie dough bites OR place drops on cookie sheet (I used a square silicone brownie square tray from Wilton.) and bake 350 for 10-15 minutes depending on oven!
**With my specific brands and by making 24 bites... 70 calories, 2 grams fat, 10 grams carbs, and 3 grams protein!**
