Ingredients
Oatmeal:
-1/2 cup oats
-1/4 teaspoon vanilla extract
-1 packet stevia
-1/4 cup unsweetened apple sauce (If you have an unsweetened berry apple sauce, try using it! I didn't, but it could amp this recipe up!)
-1/4 cup unsweetened almond milk
-1/8 teaspoon salt
-1/4 mixed berries (blueberries, raspberries, and blackberries is what I used!)
-1/2 scoop MRM Fruit-n-Whey Mixed Berry

Frosting:
-1/4 scoop MRM Vanilla Ice Cream Casein (that's not easy to eye with a big scoop and I like being precise, so I measured grams and it's around 7 grams or 2 1/2 tablespoons!)
-2 tablespoons plain greek yogurt
-2-4 tablespoons unsweetened almond milk (Add one at a time till you have a consistency that you prefer, more of a vanilla sauce or vanilla frosting.)

Directions
1.) Preheat oven to 375 degrees.
2.) In a small bowl combine all oatmeal ingredients listed above.
3.) Spray a small oven-safe dish, loaf pan, or I used a ramekin and pour in mixture.
4.) Place in oven for 25 minutes. After this time check with a toothpick, mine needed more time as berries add moisture to this baked oatmeal. So I upped oven to 400 and baked for an extra 10 minutes. I also like a nice crunchy top. :)
5.) While oatmeal is baking prepare topping by mixing ingredients together in a small bowl... remember one tablespoon of almond milk at a time. It goes from perfect consistency to liquidy mess easily so please do it one at a time!
6.) Take oatmeal out and let it cool for a few minutes, add topping and enjoy!
