Low carb, high protein pumpkin pancakes! Just in time for the fall and very easy to make. They are also gluten free.
Mix all ingredients in a bowl. Grease pan with a non stick spray. Ladle mixture onto hot pan. Flip after one to two minutes. Cook for another one to two minutes. Top with cinnamon and pancake syrup of choice.
