This raw, vegan caramel apple pie is the perfect treat with a perfectly spiced crust, a yummy date caramel, and apple slices then topped off with peanuts. It's the perfect after dinner treat.
Makes 1 mini pie
Crust
- 1/2 cup oats
- handful softened dates
- handful almonds
- sprinkle each cinnamon and nutmeg
Caramel filling
- 1/2 - 1/3 cup date caramel (just combine dates and water in a food processor and blend until smooth)
Topping
- 1 apple, thinly sliced
- handful nuts
To make your crust, combine ingredients in a food processor and process until mixture starts to clump together. Press into a medium sized ramekin and set aside. Make your date caramel and spread a little evenly over top your crust (be sure to save some for your apple layers). Slice your apple into thin slices and layer on top of your date caramel. Spread a little date caramel over each layer of apples. Repeat until you have no more apple slices. Top off with a little more date caramel and a handful of peanuts. Enjoy :)
