Recipe:
-9oz cashews or macadamia nuts, soaked overnight*
-1/2c coconut cream (from top of coconut milk can)
-2/3c coconut oil or ghee, melted (I did both)
-1/2c lemon juice
-1tsp lemon extract
-60g erythritol (or another sweetener)
1) Put all ingredients in a blender and blend until smooth
2) Pour into a 8-9in diameter pan
3) Refrigerate for 3 hours until hardened
