Skip the McDonald’s drive through and make your own Egg McMuffins.

² Ingredients

  •  12 large Egg White
  •  3/4 cup, pieces or slices Mushrooms
  •  3/4 cup, chopped Sweet Red Peppers
  •  1.5 cup Baby Spinach
  •  4 serving (serving = 1/4 tsp.) Mrs. Dash Garlic & Herb Seasoning Blend
  •  1.5 serving (serving = 4 oz) Jennie-O Extra Lean Ground Turkey Breast

Ingredients
12 egg whites
6 oz. ground turkey, divided
3/4 cup peppers; chopped
3/4 cup mushrooms; chopped
1 1/2 cups spinach; chopped
1 T Mrs. Dash garlic and herb seasoning

Directions
Preheat the oven to 350 degrees F and spray 6 large muffin tins with coconut spray
In a medium skillet, brown the meat until cooked
Combine the cooked meat with the chopped vegetables and spices
Divide that mixture evenly into each muffin tin
Top with the egg whites
Bake for 25-30 minutes or until cooked through (if you’re using smaller muffin tins, reduce the bake time)
Allow the eggs to cool for several minutes before removing from the tins
Allow the eggs to cool completely before refrigerating
When ready to serve, microwave for 2 minutes
