Set it & Forget it! Tasty & Tender Chicken

² Ingredients

  •  3 breast quarter (yield after cooking, bone removed) Chicken Breast
  •  1 fruit (2-1/8" dia) Lemon
  •  1 tsp Minced Garlic
  •  2 tsp, leaves Oregano
  •  1 serving (serving = 1/5 second spray) PAM Organic Olive Oil Cooking Spray
  •  2 tsp Rosemary
  •  2 tsp Thyme
  •  1/4 serving (serving = 1 cup) Trader Joe's Organic Vegetable Broth
  •  1/4 medium (2-1/2" dia) Onions
   

q Directions

Rinse & Pat dry 3 Chicken Breast Halves (with Bone). Pull back skin so the meat is showing, but skin is still attached. Using a knife, make about 3 slits in each Breast.

Lightly Season with a sprinkle of Salt & Pepper (optional)

Rub about 1 teaspoon of Minced Garlic on each Breast, then evenly sprinkle with about 2 teaspoons of Dried Oregano

Before flapping skin back over, lay 1/2 sprig of Fresh Rosemary, 1/2 sprig of Fresh Thyme and a thin Lemon Slice over Chicken.

Season Skin with a dash of Black Pepper & Dried Oregano

Lightly coat the bottom of your slow-cooker with Olive Oil Spray.

Pour in about 1/4 Cup Organic Vegetable Broth and lay a few sprigs of Rosemary & Thyme before adding chicken breasts.

Top Chicken with Lemon Slices (from the remaining lemon) and more sprigs (about 2-3 of each herb) and 1/4 of a White Onion, sliced

Cover & Set Cooker on Low for about 4-5 hours.

Remove skin. Chicken will be tender enough to pull apart with a fork.
