This quick and easy meal makes for a great weekday meal prep option!

² Ingredients

  •  3 serving (serving = 4 oz) Jennie-O Extra Lean Ground Turkey Breast
  •  1/2 tsp Extra Virgin Olive Oil
  •  2 medium (approx 2-3/4" long, 2-1/2" dia) Bell Peppers
  •  1/2 medium (2-1/2" dia) Onions
  •  2 clove Garlic
  •  1 large whole (3" dia) Tomatoes
  •  4 cup Baby Spinach
  •  1/2 pepper Jalapeno Peppers
  •  1/4 cup Cilantro
  •  2.5 tsp Cumin
  •  2.5 tsp Chili Powder
   

q Directions

Preheat oven to 400 degrees F
Chop up all of the vegetables, set aside
Cut the peppers vertically and remove the seeds
Arrange the pepper halves on a baking sheet
Roast for 15 minutes
While the peppers are roasting, brown the onions and garlic with the EVOO, in a large saute pan until fragrant; about 3 minutes
Add the turkey and cook until almost completely cooked through
Add the cumin, chili powder, and salt and pepper
Add in the tomatoes, spinach, and jalapeno pepper; cook until the spinach is wilted
Add the cilantro
Once the peppers are roasted, remove them from the oven, add in the turkey mixture
