This is a new twist on my usual mugcakes. It is super moist and does not retain the mug shape very well, so it ends up looking like a volcano!
Ingredients:
2 egg whites
2 Tbsp. coconut flour
4 Tbsp. unsweetend almond milk
1/4 apple chopped
3 strawberries chopped
1 kiwi chopped
1 scoop protein powder
vanilla extract
topping:
1/2 Tbsp. pecans
1/8 cup chopped pecans
cinnamon
Mix all cake ingredients in a giant mug (make sure it's a large one because this thing gets BIG!) Microwave for about 3 minutes. Flip upside down into a bowl and top with topping:
In a small dish add pecans, honey, cinnamon, and a little bit of water to thin.
