A sweet and savory treat that can be cut into spirals or eaten as a whole!
Dough:
1 small sweet potato
3 egg whites
1/4 cup brown rice flour
cinnamon to taste
Filling:
PB2 mixed with water
sugar free jelly
Preheat oven to 375 degrees F. Microwave sweet potato for about 5 minutes.
Mash sweet potato into a bowl and mix with egg whites and flour. spread into a large rectangle on cookie sheet covered with parchment paper. Cook for about 20 minutes
While it's cooking mix PB2 with water until it reaches desired consistency. Spread PB2 and jelly onto cooked dough and roll it up. cut into about 8 pieces
