How about some fluffy, moist and lovely Tiramisu protein pancakes
Note: 1/2 tsp Rum extract is not available as an ingredient, but was included in this recipe
For 1 serving (4 small pancakes):
Pancakes:
A little more than 1/3 cup oats (40g)
1/2 scoop (20g) whey proteinpowder vanilla or cappuchino
1 tbsp coconut flour
1 tbsp almond flour (can omit)
1 tsp baking powder
1 tbsp greek yogurt/quark
2 tbsp unsweetened applesauce
2 tbsp cold brewed coffee
10 drops of sweet leaf chocolate stevia drops
2 Egg Whites
Cream Filling:
1/3 cup cottage cheese
1/2 tsp rum extract
2 tsp granulated sweetener
Mix ingredients for the pancakes with a hand blender (important, oats need to become a flour). Fry in some coconut oil in a pan, 30 sec each side. Mix the ingredients for the cream with a handblender (electric) to get rid of the lumps. Stack the pancakes and layer with the cream. Dust some cocoa on top
