Who doesn't love cinnamon rolls? These delicious breakfast treats are made without yeast but still come out incredibly soft and fluffy! They are stuffed with a combination of date caramel and diced apple which pairs wonderfully together!
yeast free apple stuffed cinnamon rolls
for the Dough:
2½ cups whole wheat flour
2 Tbs coconut sugar
1¼ tsp baking powder
½ tsp baking soda
1 cup buttermilk (I used 1 cup almond milk + 1 tbsp lemon juice
¼ cup coconut milk (not canned)
2 Tbs butter, softened
3/4 cup leanbodyforher vanilla protein powder
optional 3/4 cup raisins or unsweetened dried fruit (I used prunes and dates)
Filling
1/2-3/4 cup date caramel
1/2 large apple, diced and softened*
Cinnamon
2 tbsp butter, melted
*dice apple then add cinnamon and just enough water to cover apples. Microwave a couple minutes until apple softens.
Combine flour, sugar, baking powder and soda, and protein powder. Mix well. Combine buttermilk (or prepare milk + lemon juice and let sit for 5 minutes) with coconut milk and butter. Add wet mixture into dry ingredients and mix well. Add in dried fruit, if using and mix well. Dough may be sticky so lightly flour a counter space and your hands before handling. Knead dough as best you can on the counter space and form into a rectangle. Make sure dough is not sticking to thr counter so you can easily roll it up after adding filling. Brush dough with melted butter and Add the softened diced apple, and sweet potato caramel. Sprinkle cinnamon on top. Make sure to leave a border around the edges of the dough so the filling doesn't seep out too much when you roll up the dough. Carefully roll up dough then cut off pieces and layer onto a 9in pie pan. Bake at 425 degrees F for 15 min then reduce temp to 350 degrees F and bake another 10 minutes.
