These green waffles are perfect for breakfast, brunch, lunch or brenner!! Yummm
In a VitaMix, blend 1/2 bag fresh spinach and 4 large eggs (whole) until smooth. In a large bowl, mix 1/4C coconut flour, 1T xylosweet (or sweetener of choice), and 1/4t baking soda. Slowly pour and mix wet into dry. Separate the batter in half. Spray a waffle maker with coconut oil and cook. I served mine with a slice of “baconâ€, a 1 egg omelet and some yellow mustard. I put some cheese on my moms and she really liked it. The coconut flour is really dense so you will want something creamy; maybe guac?
