These are incredibly fluffy and thick, with the perfect amount of chewiness and a wonderful flavour combination. Enjoy!
Blueberry Lemon Pancakes
Ingredients:
40g (oat) flour
1/2 tbsp psyllium husk
1/2 tsp baking powder
2 stevia packets
2 egg whites
1/4c applesauce
1 tsp lemon extract
1 tsp lemon zest (optional)
~1/4c blueberries
Directions:
1. Combine all ingredients well and cook in 2-3 tbsp dollops over medium heat.
2. Flip when bubbles appear (1-2mins).
3. Top with lemon cream (1/2 tsp lemon extract, 1 tbsp milk, 1.5 tbsp Greek yogurt) and a chocolate drizzle (1 tbsp cocoa, 1 tbsp SF syrup, 1/2 tbsp milk), blueberries, almond silvers and caramel popcorn. Serve and enjoy.
