Delicious and wholesome breakfast muffins - perfect for on the go!
Preheat the oven to 180 degrees C. Mix together in a bowl: 2 cups gluten free oats, 1 cup natural Greek yoghurt, 1/3 cup powdered sweetener (I used stevia), 2 eggs, and 1/2 a tsp baking powder. Once combined, gently stir in 1 cup of chopped strawberries. Then spray your muffin trays/liners with cooking spray (to prevent sticking) and pop the mixture in. Pop some more strawberry chunks on top if you want. Bake in the oven for about 20 minutes - keep an eye on them. This recipe makes 6-8 muffins depending on the size!
