Sick of veggie omelets? Me too. Try this savory recipe :)
Filling:
1/2 cup mashed sweet potato
1 Tbsp. almond butter (or PB)
1/2 scoop vanilla protein powder (i used veggie protein)
1 Tbsp. unsweetened almond milk
cinnamon to taste
omelet:
5 egg whites
microwave sweet potato and mash. Combine all filling ingredients in a bowl and mix well. Spread this filling inside your omelet and enjoy!
