Awesome breakfast meal prep for the work week!
1. Sautee diced onion, sliced mushroom, spinach, and arugula in coconut oil. Add salt and pepper.
2. Peel and chop sweet pot, then roast, steam or cook in microwave.
3. Brown ground turkey, then add salt, pepper, and sriracha (optional).
4. Grease muffin tins with olive oil spray or coconut oil.
5. Scoop 1 tbsp spinach mixture, 1 tbsp turkey, 1 tbsp sweet pot, and 2 tbsp egg whites into each cup.
6. Bake at 350 for 20 min.
